This sandwich does take a small bit of time but I can tell you it is well worth it.

Caramelized Onion and Mushroom Brie Grilled Cheese

Ingredients
  1. 4 Slices thick cut loaf Bread
  2. Brie Cheese
  3. 1 onion, sliced
  4. 2 cloves Garlic
  5. 10 Mushrooms, sliced
  6. 75ml Concentrated Beef Broth
  7. ½ teaspoon Thyme
  8. 1 teaspoon all purpose Flour
  9. 3 tablespoons Butter
  10. Salt & Pepper
Instructions
  1. Heat a heavy skillet to a medium heat, melt 2 tablespoons butter and cook onions on a low temperature for about 15 minutes until they become nice and caramelized.
  2. Add mushrooms and garlic and cook for a further 8 minutes.
  3. Add in beef stock with 1 tablespoon of all purpose flour and bring to a simmer until a nice sauce forms. Add in thyme and stir.
  4. Butter bread with remaining butter on outer sides of bread, place brie and mushroom onion topping on top, place other slice of bread on top, make sure buttered sides are out the outside.
  5. Place sandwich on a hot non-stick pan for about 3 minutes per side or until it becomes nice and brown.
Notes
  1. Tip: (using another heavy saucepan, you can press on the sandwich to make it more like a pressed sandwich)
