  1. 4 tablespoons extra-virgin olive oil
  2. 1 onion, finely chopped
  3. 1 small green bell pepper, finely diced
  4. 1 teaspoon chili flakes
  5. 1 garlic clove, minced
  6. 1/2 teaspoon dried oregano, crumbled
  7. Salt and freshly ground pepper
  8. 2 cans tomato sauce
  9. 1 bag tortilla chips
  10. 8 large eggs
  11. 200g cup shredded Mozzarella cheese
  12. Chopped coriander, for garnish
  1. Preheat oven to 200°F.
  2. In a saucepan, heat olive oil to a medium heat, sauté onion, bell pepper, chili flakes, garlic and oregano.
  3. Season with salt and pepper and cook for about 5 minutes.
  4. Add tomato sauce and simmer until it becomes thickened.
  5. Spoon the sauce into a skillet or a baking dish, sprinkle with tortilla chips. Crack two eggs into each skillet and sprinkle with cheese.
  6. Bake in the oven for 15 minutes until egg sets.
  7. Sprinkle with coriander.
