BBQ Pulled Pork Sandwich

This is a fantastic recipe where you can feed a big group of people or keep the left over pork in an air tight container and add to pasta another night or on a bed of potatoes another night.

Sauce ingredients
  1. 1 onion, roughly chopped
  2. 5 cloves garlic
  3. 2 teaspoons chili powder
  4. 2 tablespoons tomato paste
  5. 2 tablespoons Dijon mustard
  6. 175ml white vinegar
  7. 2 teaspoons paprika
  8. 90ml tomato ketchup
  9. 3 teaspoons Worcestershire sauce
  10. 4 tablespoons brown sugar
  11. 1 bay leaf
  12. salt
  13. 3 lbs pork butt shoulder
  14. hamburger buns
  15. store bought coleslaw
  1. Place all sauce ingredients in a food processor and blend until pureed.
  2. In a large roasting, place meat and top with sauce and 900ml water, bring to a low simmer on the stove top for about 2 hours or until the meat starts to fall apart. Turning every 30 minutes in the pot.
  3. Let pork cool in sauce, tear apart using two forks.
  4. Pour sauce into a saucepan and let simmer until the sauce becomes nice and thick.
  5. Add the pork back to the sauce and mix until well combined.
  6. Toast hamburger buns, top with bbq pork and serve with some store bought coleslaw and sliced pickles.
