Ingredients
  1. ¾ lb pasta, I used Fettuccine
  2. 5 tablespoons canola oil
  3. ½ pound cauliflower, florets
  4. ½ pound Brussels sprouts, halved
  5. Salt and pepper
  6. 1 onion, chopped
  7. 4 cloves garlic, minced
  8. 1 teaspoon chili flakes
  9. 1 teaspoon chopped thyme
  10. 75g bread crumbs
  11. 200g parmesan cheese, grated
  12. salt and pepper
Instructions
  1. In a large pot, bring some salted water to a boil.
  2. Cook pasta until al dente, this will take about 10 minutes
  3. While pasta is cooking, heat a heavy skillet with canola oil.
  4. Sauté vegetables together until they become browned, 5-7 minutes.
  5. Add onion and garlic together, stir and cook for a further 3 minutes.
  6. At this point, add 1 ladle of water from the pasta pot to the skillet.
  7. Scrape any brown bits from the bottom of the pan with a wooden spoon.
  8. Remove pasta from pot and add to skillet, fold all ingredients together. Season with 1 teaspoon salt and pepper.
  9. Add chili flakes, thyme, breadcrumbs and Parmesan cheese.
  10. Fold all ingredients together; Serve in a large bowl for sharing.
