Prawn Po Boy


Being back and forth between Ireland and America sometimes I forget some of the great food I come across while living here in the states. I have offered some US favorites in the past but have also missed out on a lot. Today I’d like to share one of my favorite shrimp (prawn) recipes that I have come across in my travels. It is simple and quick, plus can be made all under 30 minutes.

Pan Seared Cod with Succotash


This recipe is so easy you can cook it in the dark with one hand. Literally. I know because I did exactly that when I made this recipe for a charity dinner. It was a “Dining in the Dark” event…and I had a broken arm from a motorcycle accident. Thankfully, I had a sous-chef to prep the onion, garlic, tomatoes, and basil. But I was able to do the rest with one arm.
