Chicken and Sausage Gumbo

A gumbo is a classic new Orleans dish. It is a great dish that can be made so easily and fast with simple ingredients that are easily accessible. Using frozen vegetables also speeds up the process.

  1. 1 bag boil-in-bag rice
  2. 2 tablespoons all-purpose flour
  3. 1 tablespoon vegetable oil
  4. 1 onion, chopped
  5. 50g frozen peas
  6. 1 celery stalk, chopped
  7. 2 cloves garlic, minced
  8. 1/2 teaspoon dried thyme
  9. 1/2 teaspoon red pepper flakes
  10. 200g cooked chopped boneless chicken breasts (about 2 breasts)
  11. 200g spicy Italian sausages, sliced
  12. 350g/400ml can diced tomatoes
  13. 350ml chicken stock
  1. Cook rice according to package directions.
  2. While rice cooks, combine flour and oil in a bowl to form a quick roux. set aside.
  3. Heat oil over medium high heat, Add onion, frozen peas, celery, garlic, thyme, red pepper flakes. Cook 3- 5 minutes or until tender, stirring frequently.
  4. Stir in chicken, sausage, tomatoes, and broth and roux; Cook for 8 -10 minutes or until thoroughly heated. Serve over rice.
