  1. Ganache
  2. 500g bittersweet chocolate
  3. 500ml heavy cream
  4. 30ml dark rum or whisky
  5. Custard
  6. 2 eggs
  7. 3 tablespoons cornflour
  8. 700ml milk
  9. 3 tablespoons sugar
  10. 1 teaspoon vanilla
  11. Cream
  12. 475ml Cream
  13. 4 tablespoon caster sugar
Ganache Method
  1. Bring cream to the boil and pour over chocolate in a heatproof bowl. Cover and set aside for 5 minutes.
  2. After 5 minutes stir chocolate mixture until it is shiny, add liquor and stir more.
Custard Method
  1. Whisk eggs, cornflour and milk together in a saucepan until smooth
  2. Continue whisking on the stove top until the custard becomes thick.
  3. Remove from heat, whisk in sugar and vanilla. Let come to room temperature.
Cream Method
  1. Whisk ingredients until stiff peaks form.
  1. In a clear glass, stack ingredients, ganache, custard and finally cream, top with some extra chocolate chips or shavings.
