Ingredients
  1. 200g brown sugar
  2. 120ml cream
  3. 4 tablespoons unsalted butter
  4. 1 tablespoons vanilla extract
  5. 200g pecan nuts
  6. 100g unsweetened coconut flakes
  7. 1 tub coconut ice cream
  8. 1 package chocolate wafer biscuits, broken up
Instructions
  1. Mix the brown sugar, cream, butter and salt in a saucepan over medium-low heat.
  2. Cook while whisking gently for about 7 minutes, until it gets thicker.
  3. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly add in the pecans and set aside.
  4. In a glass or jam jar (if you have some hanging around) add a tablespoon of wafer biscuits followed by 2 scoops of ice cream, then pecan caramel sauce, coconut flakes, more wafers and repeat one more time.
