Cranberry Apple Raisin Crisp

The reason why I love to do a crisp/crumble around the holidays is because you can make it ahead of time and just pop it in the oven when you sit down for your main meal so its ready by the time you are done eating main course.

Ingredients
  1. 100g old-fashioned oats
  2. 80g plus 2 tablespoons flour
  3. 100g dark brown sugar
  4. 5 tablespoons cold butter, cut into ¼ inch pieces
  5. 150g dried cranberries or 300g fresh
  6. 3 Golden Delicious apples, peeled, cored, and cut into 1/2-inch pieces
  7. 80g dried raisins
  8. 150g granulated sugar
  9. Grated zest of 1 orange
  10. 200ml orange juice
  11. 1/4 teaspoon ground cloves
Instructions
  1. Heat the oven to 375°F/190°C. In a medium bowl, combine the oats, the 80g flour, and the brown sugar. Add the butter and rub it into the flour mixture until small crumbs form. Set aside.
  2. In a large bowl, combine the cranberries, apples, raisins, granulated sugar, the 2 tablespoons flour, orange zest and juice, and the cloves. Transfer the fruit to 6 – 8oz Ramekins or a large baking dish.
  3. Top the fruit with the crumb mixture. Bake until the fruit is tender and the crumb topping has browned, about 45 minutes. Let cool at least 15 minutes before serving
Notes
  1. This can be made a few hours before hand and set aside. Top with ice cream if you wish.
