Double Nut Chewy Chocolate Brownies

This are truly the best brownies out there, by melting the chocolate first leaves you with a moist result and by adding almonds and walnuts gives you a wonderful chewy texture. This one is a keeper people.

  1. 90g unsalted butter, cut into pieces, plus more for the pan
  2. 300g semisweet chocolate, chopped
  3. 200g sugar
  4. 1 teaspoon vanilla extract
  5. 2 large eggs, at room temperature
  6. 70g all-purpose flour
  7. 100g walnuts, coarsely chopped
  8. 100g slivered almonds, coarsely chopped
  1. Preheat the oven to 350°F (175°C).
  2. Line the inside of an 8-inch square pan with 2 lengths of parchment paper.
  3. Lightly butter the foil or parchment paper.
  4. In a medium saucepan over low heat, melt the butter. Add the chocolate and stir by hand until it is melted and smooth. Stand over it, you do not want the chocolate to get grainy and burn.
  5. Remove the pan from the heat and stir in the sugar and vanilla until combined. Add the chocolate to a mixer.
  6. In the mixer, beat in the eggs 1 at a time. Add the flour and mix on a medium speed for 1 minute until the batter loses its graininess. Add in the chopped nuts at a stir speed.
  7. Scrape the batter into the prepared pan and bake until the center feels almost set, about 30 minutes. Do not over bake.
  8. Let the brownie cool completely in the pan.
