  1. 3 tablespoons canola oil
  2. 2 carrots, diced
  3. 1 red bell pepper, diced
  4. 150g corn, fresh or frozen
  5. 2 scallions, sliced
  6. 3 tablespoons fresh ginger, minced
  7. 3 cloves garlic, minced
  8. 400g prawns, tailed, deveined and cut into pieces
  9. 600g brown rice, cooked
  10. 2 eggs, beaten
  11. 120ml cup low sodium soy sauce
  1. Heat 2 tablespoons oil in a wok or large skillet.
  2. Add the carrots and peppers and cook for 2 minutes.
  3. Add the corn and cook for 1 minute.
  4. Add shrimp, green onion, ginger and garlic and cook for further 2-4 minutes.
  5. Add the rice and heat up.
  6. Make a well in the center and add eggs.
  7. Stir eggs into rice mixture until it is cooked through and scrambled.
  8. Stir in the soy sauce and serve.
