Ingredients
  1. 2 lbs baby potatoes, washed and halved lengthwise
  2. 1 lb carrots, peeled and halved lengthwise
  3. 3 tablespoons canola oil or olive oil
  4. 1 teaspoon sea salt
  5. 1 teaspoon fresh ground black pepper
  6. 2 tablespoons fresh thyme, minced
  7. 2 lemons, juiced
  8. 2 tablespoons butter
Instructions
  1. Preheat oven to 200°C
  2. Bring a large pot of water to the boil and add the potatoes, let them boil for at least 5 minutes to get them tender. Drain and set on a rimmed baking sheet.
  3. Add carrots to potatoes, drizzle with olive oil, season with salt and pepper. Toss to coat evenly, roast for about 20-25 minutes.
  4. Remove from oven, place in a bowl and toss with thyme, lemon juice and butter.
