Ingredients
  1. 1 pound penne pasta
  2. 2 tablespoons olive oil
  3. 1 onion, finely chopped
  4. 4 slices SMOKED BACON, roughly chopped
  5. ½ teaspoon dried chili flakes
  6. 1 tablespoon tomato paste
  7. ½ cup white wine
  8. 1 teaspoon sugar
  9. 1 (28-ounce) can diced San Marzano tomatoes
  10. ½ teaspoon kosher salt
  11. ½ teaspoon freshly ground black pepper
  12. 4 tablespoons Parmesan cheese
Instructions
  1. Add 1 teaspoon of salt to a pot of water and bring to a boil. Cook the pasta for 1 minute less than the package instructs.
  2. While the pasta is cooking, heat olive oil over medium-high heat in a large nonstick skillet until shimmering. Add onion, bacon, and chili flakes and cook until fat begins to render, about 8 minutes.
  3. Add tomato paste, white wine, and sugar and bring to a simmer for 3 to 5 minutes over medium heat.
  4. Add tomatoes and simmer for 10 more minutes. Season with salt and pepper.
  5. When sauce has thickened, add drained pasta and toss with the sauce.
  6. Divide onto 4 plates and sprinkle with Parmesan cheese.
