Roasted Pork Tenderloin

Pork really is a great meat that is fast and easy to cook. It gives lots of flavor when sautéd and then finished in the oven.

  1. 1 (2-lb) pork tenderloin
  2. 2 teaspoons coarse sea salt
  3. 1 teaspoon black pepper
  4. 1 tablespoon extra virgin olive oil
  5. 2 tablespoons unsalted butter
  6. 3 garlic cloves, minced
  7. 100ml Red wine, Cabernet is good
  8. 60ml beef stock
  1. Preheat oven to 200°C.
  2. Pat pork dry and sprinkle with salt and pepper. Rub all over with hands.
  3. Heat oil in a 10-inch non-stick skillet over high heat until hot but not smoking, then brown pork, turning, about 4 minutes. Transfer to an oiled shallow baking pan.
  4. Roast in the oven for 20 – 25 minutes.
  5. While the pork is roasting, using the non stick skillet, heat and add butter and sauté garlic for 1 minute, add 100ml red wine to the pot with 50ml of beef stock, season with salt and pepper and let reduce for 10 minutes. Set aside.
  6. Remove Pork from oven and let stand for 10 minutes.
  7. Slice and serve with sauce.
