Bread Dipping Oil

Grab some crusty bread and a plate. This dipping oil brings together olives, garlic, Greek seasoning, balsamic and Parmesan, with a little heat from red pepper flakes. Stir it up, let the flavors mingle and get dipping.

Recipe by Stuart O’Keeffe.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup finely chopped black olives
  • 2 cloves garlic, minced
  • 1 tablespoon Chef Stuart Greek Seasoning
  • 1 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons grated Parmesan
  • Warm, crusty bread, for serving

Method

  1. On a serving plate, stir together the olive oil, black olives, garlic, Greek seasoning, red pepper flakes and black pepper.
  2. Drizzle over the balsamic vinegar, add the Parmesan and gently stir everything together.
  3. Leave the dip to stand for 10–15 minutes so the flavors can come together.
  4. Serve with warm, crusty bread for dipping. Toast the bread lightly if you like a little extra crunch.
