Finished heirloom tomato jam in a saucepan

Heirloom Tomato Jam

Got a few overripe heirloom tomatoes? Put them in a saucepan with garlic, oregano and a little honey, then let them cook down until thick and jammy. Spoon it onto crispy toast and you’re good to go.

Ingredients

4 overripe yellow or red heirloom tomatoes, chopped
2 garlic cloves, grated
1/4 cup chopped onion
1 teaspoon oregano
1/2 teaspoon chili flakes
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon honey
1/4 cup chicken stock

Instructions

Simmer the tomatoes. Put all the ingredients in a saucepan. Simmer uncovered over low heat for about 25 minutes, stirring occasionally.

Mash until jammy. Mash the tomatoes as they soften while the mixture cooks. Keep cooking until thick, sticky and jammy.

Serve on toast. Spoon onto crispy toast and enjoy.
