Sometimes you just want something quick without making a whole production out of lunch. These Fly By Jing soy noodles are great for that.
Recipe by Stuart O’Keeffe.
Ingredients
- 2 chicken breasts, cut into small pieces
- Salt and black pepper
- A little oil, for cooking
- 1 packet Fly By Jing soy noodles, with the included sauce
- 1 egg
- Chili crisp, to finish
- Optional: broccoli and chopped green onions
Method
- Season the chicken with salt and pepper. Heat a little oil in a pan and sauté the chicken until cooked through.
- Meanwhile, cook the noodles in boiling water for 7 minutes, then drain.
- Move the cooked chicken to one side of the pan and fry the egg beside it.
- Lift out the egg, then toss the noodles and chicken with the included sauce.
- Top with the fried egg and finish with chili crisp.
Some cooked broccoli tossed through and chopped green onions on top would be lovely too.
